I just did this. The new cable can be fished over the fuel tank easily.
Start at the hand lever and remove the nuts on the end of the cable and bend the tab back and pull the old cable out of the hand lever.
The rubber grommet at the body sheet metal has bent metal fingers holding it in place. I cut these with a Dremel and pushed the cable thru the hole.
From under the truck remove all the various brackets and pull out the old cable starting from the front and working forward the back of the truck.
Reinstall the new cable in reverse order.
I had my truck on a lift and it took <45-minutes with two of us working on it. The hardest part is shoving the old cable thru the body hole due to the annoying metal finger things.

About to do this now, and thank you for the write up. I am assuming that you had to remove the drive seat?
