Removing fuel injectors?

Where are you stuck? Gotta unbolt the fuel rails and the line that runs over the manifold, but I think that’s about it for a quick and dirty removal.
You can remove the injectors without breaking the damper loose. If you want to remove the rail completely from the engine, then yes, you would need to remove the damper or undo it's associated hose.
There are some bolts mounting the lines to the back of the manifold. Those would need to come undone.
It really depends on your goal. If you want to be very careful and thorough, you probably want to lift off the rail entirely and you'll need to break loose the damper. If you're going for speed, you can just remove a few mounting bolts and wiggle the injectors in and out.
If you remove the damper, remember those gaskets are not re-usable. They *can* be re-used without a terrible leak, but you really shouldn't. Have a new set of gaskets on hand.

Is there any need to remove the “fuel pump” fuse in order to run the engine and drain the fuel? (I think it’s the EFI fuse, but not sure if guys are unplugging the fuse on the 100)

No, I dont think so. You could do that, but it's not absolutely required. I was just cautious when I cracked loose the first fuel connection. Expect some spillage and work on a cold engine with battery disconnected and have a shop towel or two handy.
That is a very good idea to replace the old damper (e.g Fuel Pressure Regulator (FPR)) when you are servicing or replacing fuel injectors. It is a standard item on my list of mid-life refresh parts that are replaced as part of my 200K+ preventative maintenance cycle.
When I buy a vehicle that is old enough to vote and has over 200,000 miles, I work to replace rubber components like injector o-rings, screens, and FPR that have an increased likelihood of failure during the next 100,000 mile interval.

Is it normal that the blue connector to the injector has some wiggle? Noticed this when working on gaskets and wasn't sure what to make of it.
