My gut tells me I have nothing to worry about but I wanted to double check with you guys about some rust I spotted today while spraying off some mud on the undercarriage of my 2002 LC. I've always had my cars taken care of by mechanics/dealerships but after buying my LC about a month ago it has sparked a passion to learn how to work on it. There is much to learn so bear with me.

Nothing to worry about for sure.
 
Get it! The only you MIGHT consider replacing is the parking brake bracket in the 2nd pic.
 
The worst rust is normally found on the underside of the floor at the back (above the spare wheel), under the door sills, and on the tailgate (check around the door handle)
Where are you located? Consider doing a lanolin oil treatment, Fluid Film or Krown.
 
That's pretty clean, I'd not consider that rusty at all...
 
that is all surface rust which is not big deal. i would worry more if the nuts and bolts were getting rusty, it makes maintenance a nightmare. yours is not like that though

Notice the U-joint looks dry. They and slip yokes need greasing ever 5k miles or sooner depending on driving condition.

100% agree that it's in great shape. Take a wire brush to remove the surface rust, then buy a few cans of Fluid Film. If you're in a salt state, repeat twice per year, or as needed.

Really good to hear that I'm in the clear guys!

I just bought my first grease gun and Mobile 1 Synthetic Grease. Is this grease okay for the U-joint and slip yokes (I don't know what a slip yoke is yet but its time to research it).
 
Yes it's good grease. Each of the two propeller shafts (AKA rear drive shafts) are two parts. There is a slide yoke that slip in and out of propeller shaft at one end. You'll have one slide yoke shaft grease zerk and two grease zerks spider joints (U-joints) for each shaft. Once you roll your truck so that spider grease zerk is points down you'll see the slide yoke zerk also. The front propeller shaft slide yoke zerk can be seen through the small plastic cover (oval shaped with two screws holding onto plastic undershield) that you'll remove to drain the engine oil.
