Probably disturbed a vacuum line or something during installation. spray something flammable near the intake manifold and see if it races?
 
You disturbed something vacuum related, would be my best guess.
Have you checked the intake tube from the air cleaner to the throttle body for cracks, they hide in the flex portion.
 
Did you disconnect the ribbed intake tube mentioned above, or check the air cleaner and flex it? Did you disconnect the AFM and not reconnect.
 
Just a quick note. Idle speed should be 650 at NOT. If your idle speed is 750, something is not quite right.
I have never heard of any 80 stalling due to the ECU relearning. Typically the idle is slightly higher than normal for a few drive cycles. Something is amiss.
I would verify that the throttle cable has some slack at idle position and is allowing the throttle plate to fully close.
