Just paid what is probably a record high to get my trans rebuilt, the genius forgot to torque the drain plug back so it fell out somewhere on the highway and I drove the gx a couple miles while it leaked all over the place. When I finally parked and turned it off is when it really started pouring out. The issue is I don’t know how much I lost and wanted to see if anyone had any tips on determining how much to put back since I have no clue how much was lost.

IMO.. you should call that shop and have them tow it back and inspect it for damage. At least take the pan off and check for metal, debris and damage. It maybe ok but most likely shorten the life of that transmission. You also may void any warranty by trying to fix this yourself.
