Disclaimer: Searched the forums for an answer with no luck...

My A/C blows (very) cold air, but it doesn't seem to push a suitable volume on high (I'm in FL, truck is black and it's hotter than two squirrels screwing in a wool sock). There are three (or four?) distinct speeds when operating the switch, but "high" doesn't seem to be very high (as compared to modern vehicles). Should I troubleshoot the resistor/switch/motor or is this just the way these are?

If the fan does work at all settings, then it is not likely the resistor. I would take the time to pull the fan motor and clean it all out, make sure the ducting is clean and connected properly. Clean out/replace the cabin filter and test again. Seems more like an air restriction or possible loose ducting issue.

Should it "blast" out on high or is it just mediocre? I have nothing to compare it to, other than a "modern" car.

I would not say mine is as good as most newer cars, land cruisers have always been notorious for fogging up in colder weather and moisture in the cabin will condensate on the windows, requiring cracking the windows and having the defrost on high. Probably something you will never have to deal with in Florida, but I can appreciate the need for good air flow in hot weather as well.

You could also test how easily the "squirrel cage" spins on the motor itself, it should spin easily and freely. If there is resistance at all, then you may want to clean up the motor and lubricate the bearings. The system is quite simple and easy to work on. The reassembly of the motor requires a little patience as the brushes are spring loaded. I did this a couple of years ago and it has been fine since.

Do you have another land cruiser in the area that you can compare yours with?
 
Mine has a significant noise increase from fan speed 3 to 4 and it does blow pretty good.

Check for mouse nest in the ducts.
 
First place to check for obstruction is the face of the evaporator. That's where all the dog hair, fluff and leaves always build up.
