For those aficionados of the Hatch chili, check your local Basha's, roasting begins this weekend..:bounce::bounce2:

Yes, put them on and in everthing you eat..:D (I guess ice cream could be excluded here)..Or stuff them.

Good idea, I know the cast iron master has some as well as the big D, post up fellas, but I think we need pics to make it work, which requires fresh chilis.

I usually buy the 40lb bag, either medium or hot, have to befriend the roaster dude and see if he has samples to test for tolerance (later in the day is usually better for this). Stuff 2 to 8 in a sandwich sized ziplocks and freeze. Gives me a years supply.
 
Here is a couple of my simple favorites:

As a salsa:

4 lg. Tomatoes (chopped)
1/2 cup onion chopped (either white or vidalia)
3 Anaheim or hatch chiles (roasted, peeled, seeded, and diced)
1/3 cup of fresh cilantro (chopped)
2 Tbsp olive oil
2 Tbsp. lime juice (fresh squeezed key limes are best)
1/4 tsp. ground cloves
1/2 tsp. ground cumin

Mix it all together, cover and let it sit at room temp for about an hour before putting it in the fridge. You an also add habanero, serrano, or jalapeno chiles to kick it up a notch depending on your taste. Make sure to seed and vein them if you do.

As a marinade:

1/2 cup olive oil
1/2 cup lime juice
1/2 cup tequila (100% blue agave reposado or anejo is best) plus you get to do a few shots while making it ;)
1 shot triple sec, damiana, or cointreau
4-5 Anaheim or hatch chiles (roasted, peeled, seeded, and diced)

Put it all in a ziplock bag and add your chicken. Let it marinade for a couple hours at the least, if not overnight, in the fridge. Make sure you leave some of the chiles on the chicken when you grille it.
 
How about a nice potato hash with onions and chilis and a dollop of sour cream and cheese. That would pair nicely with an omelet !!

They would no longer be Hatch chiles then.

I have a friend wwho goes back and forth from here to Albq all the time. 3 years ago he brought me 30lbs of Hatch chiles for $20, couldn't beat that deal. CSC member have benefitted from this friendship at more than one club campout.
 
EVERYTHING is good with hatch chiles, however my favourite is sliced and seeded chilies wrapped around thick sliced bacon and rolled into a enchilada with 3 cheeses and marinated / shredded chicken - top with verde enchilada sauce (blended hatch chilies) and BUENO!
 
Hatch Chile is also available at the Farmers Market in Guadalupe - they roast on site too. Later in the season the stuff gets hotter. My favorite is the New Mexico style green sauce or a stew. Sauce is mostly roasted chile peppers, a little pork meat or bacon for seasoning, plenty of garlic, a pinch of oregano. maybe some salt to taste and some water - cook down unitl the peppers are falling apart. Stew is basically the same, but add add pork loin or beef, potatoes, onions, carrots and/or tomatoes in desired quantities. Hint - honey on a chip or sopapilla takes away the burn so you can eat some more...

The one in Catalina only roasts on Sat 8-2pm. Found this out yesterday:doh:
Did pick up some sample bags of medium and hot though..

Two more weekends to get it right..
 
If you want the good stuff, have to go to the correct places. Food City and El Rancho markets burn chilies and chickens outside year around. :hillbilly:

I just roasted up a batch at home yesterday - as well as put in about 10 jars of chilies' Pickels - mmmmmmm, spicy pickeled items....
