Is this quick release also what you're using under the drivers seat?

Yes.
But there is a bracket I also use in front of the seat to connect that quick release to. I’ll try to find a link to it...

I figured I'd just hose clamp the extinguisher to the quick release. Too thick?
 
I think it's one of the most important mods you can make, and it's definitely smart to not only mount it but mount it where it's easily accessible to the driver even if you're restrained. What could is a fire extinguisher in the back if you're in a wreck and trapped in your seat? A lot of clubs and events actually require you have one as a condition of running trails with them (like Cruise Moab). A fire extinguisher is something you expect to use, and most likely never will, but if you are ever the first responder to an accident where someone is literally burning to death trapped in their seat, you'll never want to be in a car without one. I used H3R stuff, and it's solid:

Did you have to cut or trim the plastic on the front of the seat at all? Do you think it would support a 5 lb extinguisher?

I have that mount and used it for both a 5lb and 2.5lb extinguisher:

It was fine if I was the only one driving the truck because I run with the seat all the way back (6' 4").

The problem came about when someone shorter wanted to run the seat forward. It was OK for a couple of inches, but as soon as the plastic "skirt" on the front of the seat hit the extinguisher, it was no go.

Even with the extinguisher removed, the seat skirt would hit the extinguisher mounting hardware:

I even tried it with the mounting clips for an ELEMENT 50 extinguisher, but ran into the same problem.

My latest project is to try to mount one or two ELEMENT 50 extinguishers directly to the front of the seat on the plastic skirt. In theory, looks promising, but I'm still playing around with exactly how to mount the ELEMENT 50 clips - latest is 3M VHB bonding tape using a 2" x 3" metal plate between the mounting clips and the seat.

Element fits with clips beside the seat easily. I have a phobia of things in the footwell.

Those sticks are the best! I still have a 5lbs H3R in front seat. 2 of those driver side and passenger side and a 25lbs Halon in the back. I am terrified of fire. 2x I saw vehicles burn to the ground because there wasn't enough suppression. All started from something very small. I am so neurotic about it I run fire drills. My wife and close friends know how to open a hood, wait 2 seconds for the flash and spray, where to spray for a break fire or fuel line fire. It sounds over the top but it can be a life saver or more likely just keeping a perfectly good vehicle from burning to the ground.
 
Like the setup, but how does that release with the hose clamps?

The hose clamps connect only to the partner piece that disconnects from the mount when you oull the pin.

Well, that looks familiar! ;)

Did you simply run wood screws into the plastic underneath like I did, or remove parts and add a washer/nut behind? I've pulled mine off every few times I climb in, just to make sure it stays snug. Not a bit of wiggle, yet.
 
Does anyone know how to remove the plastic cowl (heel kick plate) on the front driver and passenger seats? I would love to rivet my element sticks to those spots. Thanks!

Just drill a hole from the front to rivet into? Blind rivets don’t need anything else do they?

Very true, but the rivet gun can't sit flush against the head because of the shape of the mount, so I need to rivet from the back.

Also, couple minor issues even if the above were feasible:
1. hitting the leather behind it
2. being on a spot with uniform thickness
 
Makes sense to me to have it as accessible as possible. Like others, I have some anxiety about having anything other than pedals by my feet.

Size does certainly matter here... but it’s your basic quick release, seat still has full adjustability and it can come with me at any moment while exiting the truck.

I own a restaurant and I’ve seen both grease and electrical fires go from small to frightening in a matter of seconds.
