howdy~! does anybody know if you can take say a 180 t-stat and somehow make it a 170 by drilling a hole in it or somehow altering it

Yeah, I'm suspecting the fan clutch silicon oil is dying, that is loosing it's viscosity, or it could even be leaking out. That will cause overheat problems when going slow or at idle. The FAQ has a thread on changing it. I just put an excess of 10k silicon oil in mine and it is acting locked up. I'll have to remove a bit and see how it goes.Is it running hot on the highway, or at idle, or both?
