How about FZJ80 Cable lockers in a 1983 FJ60? Will they work in the FJ60 diff?

I think you'll find that the 80 series had electric lockers. The front is an 8" high pinion diff similar to what one might find in a Hilux and the rear is a Land Cruiser item. I don't know what the consensus here is, but I'd expect it to not be a practical consideration using 80 series stuff for the most part.
If you want selectable lockers, your best bet is going to be ARBs.
If you want cable lockers, you should consider getting complete axles from a parts supplier like G&S or Radd Cruisers. Expect to pay about $4k for cable lockers, and also expect to wait quite a while as well.
