This is the most interesting abbey ale I have ever had. It's 10% and has a slight sweet finish. It's dark like a stout in my opinion.

Brewing up a Belgian Tripel tonight. Should be about 8.5% ABV when it's done. Nothing beats the smell of boiling hops and malt.

I have one that has been in the secondary for about 3 months now; I am so impatient!:cheers:
 
Just aging it I guess. I have heard good reports of aging for at least 12 months. :meh: Would you suggest I do the aging in the bottles instead? (Serious question)
 
I prefer bottle conditioning. It lets you start drinking the beer and taste the difference as it gets older. I bottle it after 2-3 weeks if the specific gravity is in range. It also ensures there is enough active yeast to carbonate the beer well. That being said I haven't been brewing that long so I could be wrong.
