I am looking at these Method 703 wheels: 703 | Matte Black - https://www.methodracewheels.com/products/703-matte-black?variant=31922243207229

I've seen plenty of 17x8 0 offset, but nothing in 8.5. Should I worry about another .5" in wheel width? And then what size tire are people running on 8.5" wide wheels. I am hoping to stick with 275/70/17. It's a 2010 w/ sliders and Ironman 2.5" lift

Most are running 285/70r17. If you do an image search of the gx460 with the method nv wheels that’ll give you a good idea of how it will look. I believe the nv is also 0mm offset.
 
I'm running Black Rhino Bullhead 17x9, 0 offset. 265/70/17 BFG KO2. Looks just right and I did not have to remove liners, just massage them gently with a heat gun. The best part is that the new spare fits underneath, just barely but it does. Anything bigger will most likely not fit.

OK, this is all good info. So it sounds like I can run a 275/70/17, I just wont get a spare of that size to fit (stock hitch is currently installed) Thanks guys!
 
Generally you want as narrow a width rim as possible. The reason is that when you air down on the trail, you'll be far less likely to blow a bead off your rim. The narrow rim will help keep the tire seated.
All racers and any serious off roader will run narrow rims. You'll never see a "real" off road vehicle with 9" or 10" wide wheels, even if they have 12" wide tires.
In short, the 8" wide wheels will work great!
 
I went 275/70R17's on my '19 and wish I had gone 285/70R17. Just my .02 but the 275's look a little small after the 2.5" lift.

Looks good. Did you have any issues mounting the spare 275 in the stock location?
 
Still running the stock spare until I get either the JW off-road door mount or a swing out
Just a heads up, DO NOT use your spare tire if you get a flat with your oversized tires you presently have on.
You will ruin your drive train, e.g. transfer case, differentials, transmission.
Been there done that on an All-Wheel-Drive Previa back in 1995. Fortunately it was still under warranty. Cost: $3,500.
Note that our vehicles ARE also All-Wheel-Drive, along with a low range.
If you get a flat, as long as it's not a sidewall blowout, you're better off keeping a can of tire sealant and compressor in your rig. Do a Google of best tire sealant, pick one up at your local store and keep it in your rig until you get your rear tire hanger.

Having your old spare under there does absolutely nothing for you.
