I used to buy the ends of the mignons from my local market for cheap, theyre like tiny tri-tips but OMFG so good. I asked about them at another market that sells good meats and they said, oh, we just grind that up into hamburger meat.

There's a cut called the "hanging tender" that's just off the filet -- it's excellent and not very expensive at all -- one of the butcher's cuts that usually gets ground up into other stuff at most commercial shops...

hanging tenders are nice, however, they are hanging off the kidneys. They have the same meat consistency as skirt steak but much more tender. Great flavor, but if they have too much age they taste exactly like kidney fat.....which is fxxxing nasty..
 
Here's my day two. Thanks for the idea Splitshot.

Unfortunately we don't have enough year-round Mexicans in town to justify a tortilla factory. But luckily Costco here in the mid-west started carrying these raw tortillas. I used to buy them out west, so I'm glad started carrying them out here.

We used a green enchilada base, then added some cream of mushroom soup to make it creamy, and then some fresh garlic, chipotle peppers in adobo peppers, and cilantro. I added the tri-tip at the end so it didn't overcook.

My :princess: makes some really good semi-home made black re-fried beans and garlic, which topped the meal off nicely. :cheers:

That knife looks familiar....J.A. Henckels Santoku?

It does say Santoku on it, is that the style of knife it is?

It's actually a "Napa-style" knife from Costco. It says it's made with German Chro-mo steel, then it loses it's credibility by stating it's made in china.

It came in a 3 pack (sm, med, lg) for ~$50. They have held up for almost 4 years, even though they go through the dishwasher regularly. They can hold a decent edge if you sharpen them from time to time.

Yes. I have the Henckels version. It's a very versatile style of knife. I use it more for vegetables but sometimes I will slice meat with it as well.

I agree, it's a good knife for vegetables. If it's sharpened it cuts meat pretty well too.
 
Wife is preparing a tequila based marinade for one right now. We are really lucky that the local supermarket promotes the s*** out of tri-tip and we load up on 4 or 5 at a time all summer long. Still have a couple in the freezer right now.
 
Remembering something. We did beef and pork fondue last night.

Pork loin and Tri-tip fried in peanut oil.

F'n awesome :)
 
Had tri-tip at some Brazilian churrascaria in Palm Springs 2 weeks ago. I gave it a :meh:, but maybe it was the restaurant.

Don't seem to find tri-tip here in the stores to try it out by cooking it myself but I am in a pretty small town.
 
I think this is my first post at ih8mud, and I finally bought an FJ62 this past weekend.

But the talk of Tri- tip! That is by far my favorite cut of meat in terms of bang for the buck! I think it is every bit as good as a New York, maybe not as consistent.

There are roasts available, but our grocer cuts them into steaks and there are usually a few packs he makes a day.
 
i noticed some tip roast packages the other day in a small town grocer. looked identical to tri tip that we got from costco. haven't ever noticed any in the larger stores' not that i keep my face in there.

it was a special moment.:flipoff2:
