Is there a hack to turn on and toggle through all the cameras at any time, any speed? I’d like to be able to push the dash button to see camera feed in the display while driving more than 5mph.

On other vehicles I've seen folks wire-in a switch that disconnects the speed sensor, effectively fooling the vehicle into thinking it's stopped (which, in this case, would enable the cameras). Usually described as a "navigation override" or something similar.
Im mostly interested in relocating that fing button.
Im not sure which moron thought the parking view camera button and the disable parking sensor button should feel identical, be within micrometers of each other, and hidden from the drivers view behind the steering wheel.
Just when you want to see your surroundings to avoid a parking collision, you've disabled the distance sensor by mistake. Super dumb.
