What are the advantages of converting from the carburetor to the Sniper EFI? What things would I notice in driving my FJ40? Starting? Gas Mileage? Drivability with elevation changes? Drivability with temperature changes (hot summer weather to cold winter weather)?
 
Starting, throttle response, elevation compensation.

I will caveat this to say: if your engine isn’t in good shape and a good tune before the sniper, it will likely be worse with the sniper. I think a lot of people have a poorly running engine and instead of doing the work to properly get it running, they throw a sniper at it then say the sniper is junk.

Not saying this is your case, just putting that out there.
 
@Skreddy pretty much nailed it. It is a great upgrade.

Biggest thing for me is I take mine to Colorado and wheel it way up at elevation (as high at 13K). Did it with a carb a couple times and it is possible, but requires alot more work. Always making adjustments and starving out on steep inclines is a real problem. The sniper relieves those issues. Still need to add some advance, but that's the only high altitude tuning I have to do now.

It starts almost immediately.

Fuel economy is not something I track or really care about in this vehicle. I can say that I went wheeling a couple weeks ago and still had a 1/4 tank after 8 hours. That's with about 1:20 of highway and the rest on the trail. 16 gal tank.

I do carry all the spare parts: filters, pump, injectors
 
Most peoples carburator is so bad you will be able to see a noticeable difference on a healthy motor.

My 1998 FZJ70 has a “modern” carburetor and there is no way I would swap it for a Sniper even though I’m a huge fan of the Sniper
