I agree the installation of manual windows is going to prove over the top in cost and time, but the seats can be covered easily these days with a variety of things, including oiled canvas, tough cloth that can be yanked and tossed in the washing machine to wetsuit neoprene (Wet Okole). Also, I'd wager my sport (mountain biking) is rougher on interiors than your sweaty ass and my interior is near mint despite a penchant for mud rides. I simply toss a stack of old towels in the truck for these outings and my buddies (including my 227lb racing partner) and I sit on them when our backsides are coated with mud and grime. You haven't seen dirty until you've seen a few guys blasting through the mud and rain in front of and in back of each other for a couple hours. Heck, even riding alone you're getting one rooster tail in the chest and the other up your back. If you'd rather go for the carefree seating though, there are too many choices available on the market today to ignore in favor of $1000 worth of interior work to convert from leather to vinyl.
For wet gear, consider a cheap roof box you can toss everything into and hose out at your leisure.
