Recommended lift for running 35" tyres on an 80 series

All depends on your use. The the answer is yes from A to B.

I am running the OME 850J and 863 with 30mm spacers on top of both spring with the longer OME shocks to allow for a little more travel. If it makes a difference, in the rear I have Metal Tech upper/lower control arms too. Here is how my LC looks from the side.

It's all subjective you could technically run 35s with no lift whatsoever. There are just too many variables when you say run does that mean go to the mall or run the Rubicon Trail. Is your rig fully outfitted to Overland are you running basically stock.

2.5 to 3 is a good place to start, but realistically you need as much lift as will let you articulate bump stop to bump stop at deflection without excessive contact of the fenders. That can also be achieved by modifying the fenders, but that gets more involved (IIRC there was a build on here with 40's on a stock height rig that did not rub). For wheeling, I would design it so you can run 35's with the minimum lift to keep your clearance good and CG down.

In the vendor section Ironman is running a nice sale on their kits. The 4 inch kit will certainly fit your 35's, and comes with the stuff you need to fix geometry afterwards.
 
A 2" lift should be fine, The Dobinson Flexi seam to be the best bang for the buck for off road. The amount of lift you well get for any given spring is going to very significantly with how much load you have on your Reg.
 
Also, being from Australia are there limitations as to what you can do?

There is someone from Australia that follows me on IG and he runs the same size tires but as far lifts I am not sure what he is running.

This is a good point. IIRC past 50mm you need to get engineering involved, not sure how hard that is. Here in Japan if you do any sort of lift you have to get it added to the inspection, lots of $$$.
