I have changed the rotors on the front, which has improved the braking 100% but still have a really slight brake pedal movement up and down at very slow braking speeds, so sure now it's the rears, how easy is it to change the rears, I have done a search but could not find anything on how to change them, any pointers?
 
No more difficult than the fronts. Pull the wheel, pull the caliper, pull the disc.

Is the pulse bad? I did the same thing, changed the fronts and after that had a very slight pulsation. I just let it ride and it seemed to get better. I notice it more at slow speeds.

The rotor slides off of the hub without removing the hub or axle shaft. Depending on how tight the emergency brake shoes are you may need to back them off just a bit in order to get the rotors off.

I just got done replacing the rear rotors, pads and shoes. The whole process was relatively easy. Uncle Toyota sure loves his springs..there're four per side in the parking brake dept! I forgot how much I used to despise replacing the drum brake shoes on my '70 Fairlane, it all came rushing back. Ping, there went the spring!
