Quick overnighter in Linville Gorge Wilderness, North Carolina. Bought the rabbit, marinated in olive oil, salt, pepper, garlic. Should of added some lemon juice. Turned out pretty good, smoky, crispy. The dog liked it too.

That looks tasty, I love grilled rabbit! Try quartering it, brown it well in a cast iron skillet with olive oil, then cook it down at low heat with quartered onions, carrots, celery chunks and 6-8 garlic cloves and a whole bottle of red (I usually use Rioja). When the rabbit is tender, take the sauce, reduce it by half, then serve the rabbit over mashed potatoes or rice with the reduced sauce over it. Money!!

Never tried eating a rabbit before. I wouldn't dare. It's because I used to have one as a pet when was a kid.
You wouldn't dare to eat a hare?

I love hunting and cooking the cottontail bunnies running wild in my neck of the woods,
