Two thoughts about the thermostat:
Was it an OEM Toyota part or another brand? Toyota thermostats seem to be best. Gates are OK. After that short list change it out for one of the above preferably a Toyota.
No matter which brand thermostat selected it is always a good idea to validate a new thermostat is working at the temps required. I boil them in a pot of water on the stove with a thermometer in the water. All of them perform different. You could buy 10 Toyota thermostats and boil them and all would perform different within a narrow window. Some will begin to open at 170 and be fully opened by 182-183. Some will begin to open at 175.
I have done this for 25 years when replacing thermostats on numerous vehicles. I can remember a total of 2 brand new ones I tested which opened at a much higher temperature than specified and one that never fully opened!
If you pick one that opens at a lower temp the radiator is able to start working at a lower temperature and should yield a vehicle operating at a few degrees less than one that begins to open at a higher temp.
