Well, we are approaching my favorite season.
Fall
Soup is just around the corner, and I can't wait.
Just did up a batch of killer chili verde a few days ago.
Roasted all veggies on the grill, and smoked them.
Used some carnitas as I did not have the time to smoke a pork butt.
Hell I even got Mexican neighbors asking me how I did it, or wondering if I have a Mexican wife.

I hear you! Ever since I left West Texas (23 years ago) I've been on the lookout for someone to make me Mexican food better than I can make it (TexMex). I still try restaurants, food carts, hole in the walls all over but unless I go home to see the parents.... NO GO. Once you develop that regional taste its hard to find it anywhere else.

I get little tastes here and there, but never a full meal deal, if you will...

Not sure you can call it leftovers, as I can't tell you how old the kimchi is, none the less, it was tasty ... Kimchi, chicken broth, fish sauce, and ramen noodle or rice

Made my first batch of Killer Chili with leftover Tri Tip for the year,
gotta watch out and try not to get burned out on chili.
But damn that s*** was good.

And yes the Ramen is very versatile, one of the first things I taught my boys when they were younger.
It sparked their exploratory side with food, and we used leftover meat to start them off.
 
Hey, what about a bowl of Ramen, and then strip down a bunch of hot wings to use as your base????
 
What is it with our weather,
Mid 80's during the day, and high 40's at night.

We were saying this last week. I made smoked chile verde today and it was so good! I'm ready for homemade soup weather....

I know, my sons wanted some potato soup and mix in the leftover rib eye steaks.
I was sweating in the kitchen with all the doors and windows open.
 
Man, it is hard to get motivated. Short sleeve weather during the day, and mid to high 20's at night.
I used some leftover pork tenderloin (grilled), and did a fried rice kinda thing.
Sauces, veggies, rice, and pork. Family did not want the scrambled eggs to top it off with.

It is September, hot, and I'm getting burnt out on ideas for dinner.
Too hot to use the oven, and I have to wait till almost dark to grill.
It has gotten rough that my kids don't even want any messican food. (Big thing at our house)
 
Wife did a tri tip in the crock pot, then we made sandwiches with cheese.
She also included a bowl of Au Jus.
Good stuff, as a tri tip on the grill is getting very old.
 
A few nights back we did hot wings and potato skins.
Well we used the leftover potato (after canoeing out the potato's) and made small potato patties that went with some skinny rib eyes.
 
Using leftover grilled chicken with messican seasonings, sautéed some onions, poblanos, garlic.
Dumped into a pot, chicken broth and one can of cream of chicken, above mentioned veggies, and a few other seasonings.
Dumped in some rice to cook with all the liquid, and some black beans.
Right before service I will cut up some flour tortillas to thicken up stuff.
Serve with some fresh cilantro.
 
^ Similar here two nights ago for din-din: Left over roti chicken got turned into chicken tinga...stuffed into homemade tortillas with the usual accoutrements to round it all out with fresh pinto beans as the side.
 
Well, I'm gonna fire up the grill and do some baby backs tonight

I really have not done too much with soups this winter so far

What are the rest of you guys doing?
 
Just made soup from leftovers: Cauliflower, veggie broth, wild rice, shredded chicken and a little heavy cream to finish it.
 
Nourishing Noodle Soup- Plant based variation
1.5 cups carrots
1 cup onions
3 cups of chicken or vegetable broth . We use chicken broth better flavor
1 can jackfruit
1 tsp poultry season
4 oz whole wheat linguine noodles
1.25 frozen peas
1/2 teaspoon lemon zest
2 Tbsp fresh parsley
2 Tbsp fresh chives
1 Tbsp fresh dill
salt and pepper to taste
Add sliced chicken breast/thighs for a chicken soup variety
