Unless you have excess room like in a Troopy, where I have no idea what the hell I'll be doing for a final cooking solution. But I'm starting with just a foldable table, a stove and an awning.
I’m on board with you. Simple set up anywhere. I’ll drag a large cast iron Dutch oven and fry pan and shovel. Nothing you can’t cook proper with that setup.
 
I don't have a in-vehicle setup, but you all have awesome setups. I use a Jetboil for solo trips, but never anything more cool like these setups. I really like those metal chuck boxes, I'd be into getting one of those. Generally I camp with my family and we haul a small offroad trailer that has a pull out slide with a stove on the end, a fridge, and a 270 degree awning. The fender makes a decent work surface, and there is s small "pantry" for spices, etc.
 
Here's our @TrekboxX setup. It's not very "expo", but this works well for us. Cheapo butane stove is bolted in so no rattles and collapsible sink makes for an efficient compact setup. The Richlite prep surface really make this usable. Next summer this will be much more organized. Kitchens are one of those things you have to use them a lot before you figure out what works and what doesn't.
