I'm not entirely sure this is the right thread for this, but... I'm ready to drive to Salt Lake City to pick this stuff up, but I'm wondering if there's a safe and easy way to have it shipped to me that doesn't involve lots of crating, packing, and general unease with 3rd party providers.

Any ideas?

Can't imagine shipping an assembled hard top; either put it upside down on a trailer and pull it yourself, or take it completely apart and ship the pieces. Even then, I'd worry about the fiberglass cap being damaged in transit. Good luck with it in any event.

I used this www.uship.com website years ago to find an independent shipper to bring a Unimog I'd bought on Ebay from San Diego to Portland. Worked well for that. Just some Mom and Pop outfit with a truck and trailer, real easy to deal with and work out specifics like you'd have to in your situation.
