Usually I am quite handy around the part numbers, but this one is a mystery for me and google and forum search was not helping, or I user the wrong search terms.
Anyway, its an 1997 Hzj-75 pickup, EU spec, vin is: JT1PHZJ7509501699

I am looking into ordering uni joints, but there is 4 option for both front and rear prop shafts, 2 with strange numbers

Yes, they are the same, but from each part number is says 2 is required. So which 2 part numbers I need to order to have the two correct uni joint per prop shaft?
and what those *595 and *597 mean?
