I want to install a fuse block in the 80 & my search-fu hasn't answered my questions.

I would like to fuse the fridge; aux lighting; and maybe a 12V power port for an I-pad (not a lot of stuff).
Blue Sea 6 circuit seems to make the most sense.

I'm also looking at fusing the winch (M12K) with a 500 amp fuse:

I went with a BlueSea blade-style fusebox for accessories, for several reasons. Regular blade fuses aren't exactly fragile, they're more compact, and they're easy to come by. Having one type of fuse for almost everything is nice too.

Fusing the winch is a good idea. When electric motors start under high load however, they can pull as much current as they want to get going. Make sure you get a slow-burn fuse, because a winch motor can pull absurdly high power, even if for a moment. Personally, I left mine unfused much like a starter, and instead went the route of being completely anal about insulating it.

I used a Blue Sea 5029 block. You can see it next to the charcoal canister in this picture

I never even considered putting a switch on the winch line. Thanks for the idea! That'll give me a lot more peace of mind. I think I'll use a solenoid so I don't have to pop the hood.
 
Also consider the Painless Performance CirKit Boss series of fuse blocks. They include an in-line circuit breaker, relay, blade-style fuse block and harness. I installed the 7-circuit model that has 3 hot and 4 ignition circuits, which is very convenient. Link to product below:

I used a fuse block I took off a Previa which mounted to the pos post of my battery. I use it and a sealed relay off a 4Runner to operate my Hella's. I have a cheap blade style fuse block mounted behind the pass side rear interior panel for the two 12V sockets and Hella map light I installed on the centre console.
 
I switched mine instead of fusing. I wanted the switch easily accessible (as much as possible) in the event of an emergency and that meant not under the hood. So I put it here. Its rated to 900A for for 100 seconds and 350A continuous. Well over what the winch will ever draw. Plus its fairly water proof/resistant.

I've decided to switch the winch instead of fusing it, Blue Sea makes a switch that will handle 600A continuous & spikes of considerably more. Probably total overkill as I insulated all the wires quite well.
I was thinking in the event of a collision it would be nice to have it shut off.

I just installed mine last week, went with a Blue Sea PN5025, so far so good.
