pulled the 3rd members and I have the Front 3rd back and wanted to se IF:

I could drive the truck in frnt wheel drive so that I can do some work on the body while I'm waiting for the rear 3rd to be ready. I"d put a cardboard template over the open portion of the diff while driving. Going about 15 miles via street avoiding the freeway.

Don't know if I would even do it, but wanting to know if I could do it and how safe or unsafe, etc. it would be.

Should be fine, just lock the center diff lock for the trip. I can't think of why it wouldn't work.
 
As long as the axle shafts are out or supported and aren't flopping around, and you do a good flush of the diff housing before you reinstall everything you should be fine.
