The shipping is going to kill me. The modded burners are not going to fit in the original box, and the weight/size of the disks...(remember there is 3 going to seperate addys);

Yep, you can wrap em in lots o plastic wrap then seal em up with tape then add a label. If the shipper dents those discs they are driving over them with a truck.

Open favorite beer then begin by browning the meat really well, add water bring to simmer. I use round steak. Then season it with salt, pepper, garlic powder, comino, cilantro, onion and hot rotel sauce. Continue to simmer; as the water evaporates add more water and seasoning. After three sequences of adding water and seasonings, the meat becomes really tender and soft. Serve with fresh flour tortillas and enjoy.
 
I like simple and that looks simple, however I've never seen a pan like that and or cook system. What's the story there?
 
My wife bought it at a Mexican Food Market. Same principle as a disco without all of the rust. It's on a propane burner like for frying turkeys.
 
Stainless steel is a bitch to season.

Mild steel and cast iron do not rust when properly cared for, and by "properly" I mean throw some oil on it and shove it in a corner until you need it. I have dutch ovens I haven't used in a couple of years that are still 100% rust free.
 
Why not just use a pan?
 
Good question and probably the reason why I haven't purchased it yet. ;) Most pans are not concave shaped for that style of cooking though. Woks are too concave. The tripod legs appeal to me as it makes it easy to cook over an open coals/fire. Obviously, rocks can be placed strategically so that a regular pan can have a level surface to sit on but if the coals are too hot/cold, I think the Biji-Barbi would be easier to change position.

The plow discs you posted are 18.5" comparatively, the large Biji-barbi is 17" and bit lighter/more manageable.

Just bought a discada from southwestdisc.com out of NM. not a bad price considering, and Veteran owned. Can't wait to try it out making asada and papas tacos.
 

If you google "comal pan" you will get images of a flat cast iron pan , many people use comals to warm tortillas etc. This company is using the generic name "comal" as their product name?

I grew up with traditional comals and discos. Both are widely used on ranches in New Mexico. Great memories, thanks.
