I have done it Rudy's way too. it all comes to the luck of the # you draw. if you are #1, then you are stuck with what you open unless it is taken away, then you are stuck with what you open next. the last person gets full pick of everything or the last unopened gift. once you open a gift, you are stuck with it unless it's taken.
my question is- if your gift is taken, can you choose another opened gift (besides what was taken from you)? or do you have to take an unopened one?

Yes, you can steal an another already opened gift (but like you said not the one taken from you). But whoever has a gift stolen from them can still opt to take an unopened one and then open it, but once you open it it is yours until the possibility to be stolen. It is basically if you like someone's else's gift more you can steal it. It is all in good fun, so don't worry about it too much. It's not rocket science boys? Just wrap up something bought or from home and don't take too much consideration as to anyone who may get it as a thoughtful gift.

Since there will be kids at this one, please make sure it's appropriate for kids to see. I have been to some adults-only white elephant exchanges and things have been quite raunchy.

I've only experienced the way Rudy explained and I'd prefer that way. A gift is dead after the third pick. If your gift is taken from you, you can choose another one already picked if it's not dead or from the 'unkown' pile.
