Coho on the menu here tonight. Speaking of arugula: Getting some of the best arugula we've ever had out of a good friend's garden. My favorite salad greens!
 
There might be some mezcal drinks showing up in the next week or so...in the wild at that :)
 
Well Andrea bought me a Bradley smart smoker. I was a little hesitant at first, always smoked old school. I gave it a shot today and very pleased. Simple setup and basically a set it and forget it (RONCO) system... HA.

The flavor was excellent and meat was tender. I was a little off on my baby back rib time but worked out for leftovers tomorrow.

Turkey breast, salmon, ribs and thighs w/my spicy vinegar bbq sauce.

Its was pizza night tonight in our home: 96-hour cold fermented Neapolitan style dough was the base for 3 pies.

#1: A Reuben pie. Homemade 1000 Island dressing + homemade sauerkraut + smoked Wagyu brisket + Emmanthauler cheese.

#2: Julie’s famous cream, garlic, parmesan & wild mushroom sauce + a medley of roasted wild mushrooms + Fontina.

#3 as shown: Paper thin slices of tart Granny Smith apples + Italian prosciutto + raw milk sharp cheddar atop EVO drizzled crust. Then right out of the 550° oven it got fresh lemon juice coated garden fresh arugula and a drizzle of honey. Bullseye.

Served with Boulevard’s Tank Seven Saison.

Just needs: Repeat, repeat & repeat...
