I can count maybe 2-3 times I've had more than 3 people in my truck at once. The bench seat isn't great and has no headrests. Plus, I'd prefer to not have to unlatch the swing out and open the hatch up every time I want to get to my fridge. My truck is kind of tall too so that's also a pain with the fridge.

So the idea is to delete the bench and install a single bucket style seat on the passenger side and some sort of fridge mount behind the driver seat. The obvious way is to have someone fabricate mounts for all this and bolt it to the floor. But I was wondering if I could just get the bottom bench seat frame off a parts truck and have seat mounts and a fridge mount attached to it. I don't really want to drill more holes in my floors or alter the carpet at all? But I also don't know if the seat frame is strong enough to attach a bucket seat to from a safety standpoint?

Any thoughts? Does anyone else run just 3 seats?

I'm sure captains chairs has been done, maybe @TRAIL TAILOR has done them? Sounds like the headrest thing is not your main reason, but all 62 seat backs have headrest and will swap directly into your 60, just an FYI.
Other consideration might be cruiser lean. I'd determined what way it's gonna be running a majority of the time weight wise to pick the side for the fridge. Just my 2 cents.

It's just floor brackets positioned where you need them to put buckets in the backseat.

I’m not too worried about cruiser lean. I’ve got a pretty beefy spring set up on the truck. Plus the fridge would be between the front and rear axle so I think the effect would be minimal
