Yep, 315/75R16 will do fine on stock rims.

Some will, some won't. If it comes down to it, just bring them in off the truck and they shouldn't say anything.
 
Go to a different tire shop! Most people run 315/75R16 on 8" wide wheels...
 
Thanks for that because my local American tires shop said they won’t do it because it’s dangerous and voids all the warranties
Go somewhere else! That's ridiculous and if they're going to give you a bad time about that, I can only imagine how they would be if you ever needed warranty repairs etc on tires. Probably look for any excuse in the book to not take care of you.

As was mentioned, many many have put 315/75 R16 tires on the factory rims without issue. Proof, here's mine when I still ran the stock wheels

FYI from the dark side (Jeeps), I've been running 35"x12.50"x15" Goodyear MTRs on 15"x8" wheels since 2001 without issue. I wouldn't hesitate to go 315s on stock Toyota wheels.

In fact, I'm running the tried and true 285s on stock Toyota wheels right now - but, because I'm going to regear the FF&RR diffs - and contemplating 315s.
 
I have been running them for years and discount tire orders them, mounts them, rotates them......etc. I don't think they are right about it voiding the warrenty.
 
As others have said, it is not a problem to run 315s on the stock 8" wheels. It might be worth shopping around on installation, though. I had some 315 Duratracs mounted last summer and Discount Tire wanted me to pay a premium since the tires were "oversized". They quoted me ~$165 to mount/balance five tires. I called the Firestone dealer right next door that I have used for years and they did it for $85.
 
I've had the same problem with Discount Tire. I won't use then any more. They have a bunch of drones working there that just follow the corporate rule book. In your case and mine I think it is the width that is screwing you up. According to their tire / rim recomendation book those tires need to be mounted on an 8.5 - 10 inch rim.

Totally highjacking this thread... but your build is awesome. That picture you posted was somewhere on the internet a few years back and I had saved it. That’s when I realized, I wanted to build an 80 too. Your cruiser was one of my inspirations. I still have a way to go...
