I’m looking to do a full brake job. So here are my choices, thoughts on which would perform better under stop-n-go driving, towing a smallish pontoon boat (in the future) and resist fade overall the best? I’m leaning towards option 1.

They are all equivalent since they use the OEM caliper and rotor spec. You won't get "more" unless you go to 460 front calipers and rotors or a big break kit from someplace like wilwood, stoptech, or ceika.

One of those is StopTech, is that not a big brake kit? Do you have an example I can see so I know what to look for. I assumed option 1 and 2 were heavy duty brakes

Those are just stock dimension rotor and pad replacements, big brake kits would have larger rotors and either replacement calipers or brackets to relocate the caliper out to the larger OD.

A direct swap oem front brake upgrade is 10-15 4Runner or GX460 calipers, pads, and rotors. The rotors are slightly larger diameter but quite a bit thicker, more mass is a good thing as brakes work by turning friction into heat. The calipers have slightly larger pistons as well.

The calipers are perfectly fine right now so I’d like to wait before replacing them so my goal is to find the best rotor+pad setup with the stock calipers. What’s the largest rotor I can use with my 17” factory wheels? New larger wheels won’t come until later.
 
These fit on my 17s :). Like I said stock brakes are stock. Terrain Tamer has the most aggressive rotor and pad for a stock setup. If you want more braking...this is how you send it. I would pick the stoptech out of the links you sent.

Anybody tried this kit on an 80 series?

Stay away from those stoptech pads. Every car I've ever put the sport or street pads on (except my manual CR-V that had tiny brakes and I drove it like I stole it 100% of the time) I've ended up with such bad brake deposits that I ended up having to replace the rotors. They are also by far the dustiest pads I've ever had. I would highly recommend EBC greens. Great initial bite and still perfectly smooth 5,000 miles later after driving it hard in the city daily, several road trips. getting stuck in a deep mudhole and offroad driving, and towing. EBC is expensive but absolutely worth it if you want the best
