I've been thinking in using one of these 7" multimedia radios connected to a laptop as an off-road GPS.

As it has RCA input, I could use a VGA-RCA converter to see the laptop content into the screen.
I don't know if it'd possible to use the touchscreen as a mouse for the laptop, I believe it wouldn't but, in anycase, I could use a wireless trackball attached with velcro to the armrest or anywere else (velcro, so anyone in the car could control it).

Do you think it's a good idea?. I mainly worry about the toughness of the sliding screen on corrugated tracks. A double DIN would be tougher, but I believe the 80 series hole can't fit a double DIN.
