As long as your suspension droop is less than 5 inches and if you have some sleeve attachments to have it reach the jack point under your rig, you should be okay.
But, yeah, a 5" stroke is pretty short.

I've used several of these before. I really liked Westward's air over hydraulic jack. Super convenient. Although if you want to take one with you plan on buying the best air system you can possibly put on a car. They take a lot of air to work.

When you say a "lot of air" do you mean high PSI or a lot CFM?
The ones I'm used to needed both. The 20-ton Westward I had required 110 PSI and 8 CFM. They consume air about as fast as a blow nozzle, in other words as much as you can give it.

Although that was for a 20-ton jack. Smaller jacks will require less, but no matter how big the jack is it'll be a lot for an on-board air system.
 
Why would you ever need 12 tons on a GX? I have a robust air system ARB twin, 4 liter tank, and air chuck on the bumper IDK if it would be enough. If you are running the air compressor you need to run the truck.

I think you are over complicating things.

The Hi Lift is an excellent tool for recovery, not for maintenance.
For maintenance or any "driveway" work I have my rolling floor jack and jack stands. ;)
