I would get the more common size so it's easily replaced. The skinnier one will clear the KDSS on the front left wheel well best.

What type of tire are you looking for?

MT
RT
AT
HT

Of those three sizes I would go with the LT285/70r18. I prefer it’s height over the width you’d gain from the shorter 295 and 305.
We are now finally seeing more options in the 285/70r18 size. No longer stuck with just a couple options and MT’s. Falken recently released their RT tire in this size, looks promising.

A 20mm offset with a 305 width will
be a tight fit and will probably rub/hit your fenders when the suspension cycles/articulates.

Do you know how much trimming needed for the 285/70/18 with the lift, uca and +20?

With LT285/70r18 Yoko G003 MTs I only had to remove the mud flaps and trim a tad off the rocker panel cover to gain enough clearance not to rub when fully cycling the suspension. I do have the Dissent Offroad front bumper so the front is wide open. I imagine the front needs some decent amount of trimming and molding.
Search for fitting lt285/75r17 or 34" tire. Same size and more common here. Whatever is needed to make this size fit will cover you for the lt285/70r18.

With a 25mm offset my 285s tuck and clear just fine, haven’t noticed any rub spots or issues. Anything wider and with a lower offset like with your 20mm wheels would be pushing it, especially if you plan to wheel moderate/hard off road trails.

Which is more ideal?

2” lift
Spc uca
+20 offset

With an aggressive +20 offset, you'll pretty much be limited to a 285 if you want to really wheel as @TLC2013 points out. Wider is still doable but you'll have to modify the fenders or limit uptravel to keep the tire from getting into them. There's also the body mount and KDSS to consider.

With wider tires, it's an easier fit with offsets in the +25 to +35 range.

I’ll stick with 285/70/18

Do you think I should go down to 275/70/18 to play it safe?

I personally like full fat tires so I would not recommend anything narrower than a 285.

With a 2" lift you will want the 285's. For daily driving i do much prefer 275 AT's as they are noticeably lighter and handle better then a 34" MT. If you plan on running just one tire stay with 285s.
There are some 275s that are nearly the size and width as the 285s. The kenda klever RT and Cooper Rugged Trek measure large for a 275 size tire. I have had great results with the Kenda Klever RT as have many here as well. The benefit of the 275 is that there is minimal effort needed to make fit.

Go 295/70 and get it over with lol. Can confirm they stuff at 25mm offset.
Lol best advice I've heard all day. It's possible to squeeze it in with the SPC's and some voodoo witchcraft paging @100kiwi . I am in awe how you made it fit and still have more clearance then my 285s. Mud flaps installed and still clears the KDSS , some kind of sorcery going on here.

It's possible, I spent a fair amount of time playing with the alignment to get it just right. The KDSS just kisses enough to take the paint off the bar, but nothing I can feel though the steering wheel.
My offset is 31mm, factory plus 25mm spacer.

Its long gone but I’m itching for another 200.

305/65/18 on Forged TRD PRO w/1.25” Spider Trax spacers. No rubbing but I’ve never taken it off-road. Pushed the front fender liner forward and molded the front mud guards.
