I am looking to buy a 2018 gx non-air suspension model. But the pictures look like the rear lift lookstoo high. Can the rear lift be adjusted down? The Gap in the wheel bays looks too gappy. Or will different sized tires achieve a better look?

The current rims are 18" with 265/60/r18 tires

looks about right to me, hence the reason why many in this forum choose to go for a bigger tire to fill in that wheel well. My measured wheel well height pre-lift was 90cm from floor to top of wheel wheel measured through center of hub cap. Note that it will settle some depending on load.

The OEM wheels have a higher offset (+25ish) so the factory wheels/tires are sunk pretty deep into the fenders. Swapping those out with something lower offset and getting like 1 inch bigger AT/MT tires does wonders for the look.

Don't lower a GX. It's weird and wrong.

Nothing a new set of larger tires won't fix! ;)

So what size tires would you go with?

265/65/18 if you want to keep 18 inch wheels. Otherwise downsize to 17s and go with 265/70/17s. Get lower offset wheels to push the tires closer to the edge of the fender.

Just an FYI, generally, 18" tires will cost more than an equal size (diameter) 17" tire.
That's why I ditched my factory 18" wheels for 17". Not to mention that my 17's look way better! ;)
