I run 36 psi on road. 25-28 off road and 20-25 psi in the sand and glacier silt, I’ve had to go down to 15 in the sand but aired back up to 20 as soon as I could.
Good point. Almost all winter tires are directional. Always makes me a little crazy when at a stoplight the vehicle in front of me has their tires on backwards. And I see it all the time

You likely wouldn’t notice any difference. Would be ~0.25” lower (tire is 0.5” smaller diameter) and 0.4” narrower. That said a 265/70-16 is almost the same outside dimensions as the 265/60-18 Hakka 7 I currently have on my ‘13 LX.
I say defender LTX or something similar. Don’t need a full fledged AT tire for what you mentioned and will get better road/rain performance with a non AT.
A 2017 LX can easily run 18” (and some 17”) rims unless they modded to larger then OEM rotors.
I doubt you will be able to find much of an AT tire in a 21” and if you need an AT tire for function one in a 21” will defeat the purpose of an AT tire. Find some 18” tundra take offs and you will...
Nokians are the best. I’m in Alaska and have run them on all our vehicles for well over 10 years. Currently have vehicles running Hakka 5, 7 and now two with Hakka 9’s. On my 6th winter on Hakka 7’s on my ‘13 LX570.
Yes Nokians are the best. In Alaska and have Hakka 7 on my LX, Hakka 9 on our Tesla and MB, and Hakka 5 on our Subaru. I’ll be due for new winter tires next year for my LX and it will be Hakka 9 unless the 10 comes out.
