Since you have a fab shop doing the work, you can pick what you want as long as it fits the width. I have used seats in the front with integrated belts in the past - like chebby seats through the last 20 years...

Template made for the tunnel. This back section will be welded into place. Front peice will be bolted/removable to keep that OEM feeling. Additional bracing added as I've cut the body rib out, and the floor is extremely flimsy.
