What's happening between 2k & 3K rpm in 80 series motor?

After a recent steam cleaning, valve cover gasket replacement, throttle body cleanse, new plugs (NGK iridiums b/c I didn't plan ahead), new PCV w/ kit from Wit's End, fresh oil (switching to synthetic)...then 600 miles at 70 MPH mostly all good...

Now I've hit a snag with the motor. Something's dogging it down. My O2 sensors need replacing and I've got a leak under the passenger seat but they've needed replacing for a long time. :0 They're due to be replaced this Friday thanks to Yotashop and some new flanges.

It was starting to bounce when idling and would eventually cut off before all the above work; as expected, throttle body cleaning probably took care of most of that. But surprisingly, now, it's running like a dog. I can't find any vacuum hoses off; it wants to idle ok, and it's not the bounce it used to be, but it's gulping for air/fuel/fire idling now and hates pulling out, but will.

I checked the cap/rotor and the rotor was pretty fouled but replacing it changed nothing (pic for fun); I cleaned the cap and I want to replace wires, cap rotor with OEM, but I'm not even sure the $220 will fix the issue. Obviously it would be good and I'll do that, but ...

Right around 3k she seems to calms down a bit; I notice that if I drive in 2nd in order to hold high rmp, the motor doesn't really shake and complain once at 3k; so my question is what happens differently at that speed? If something cuts on or off or stays open, it might shed some light on my problem. She does run better at speed, but I think the trouble is definitely still there or under load (and 3k is really fast, btw if not in 2nd so it's hard to keep it there).

I checked the plugs again, and they're tight but honestly possibly fouled? The cap could still be the problem? But I'm hearing something in the motor I've never heard before now, too. I'm dubious it's just a hose or a cap w/ this sound now, but it could always be more than one thing...

I was thinking it could have gotten moved with the distributor cap and rotor replacement. It’s a just a guess from the list of work you’ve done. The throttle and accelerator cables out of adjustment can cause the rough running too. This was Assuming the throttle body was off for cleaning.
 
TB was off, yes. Cap was just the three bolts and I don’t think the distributor moved any but I was looking in there after it was running rough. I mean the cap could still have a crack in a contact?

It’s the long run at high speed after the bulk of the work without issue that’s confusing me.
 
Are there any cracks in your air intake tube? Have you sprayed starting fluid around the engine while it’s running to check for vacuum leaks?
 
Maybe TPS related? Probably took it off to clean the mess out of it. I took mine off to clean the TB and ended up introducing crazy idle problems like gulping air. Couldnt seem to get any good readings with a multi meter. Ended up being the TPS... Just a thought.
 
are those the two saucers by the throttle body?

No - do a search and you'll find many threads on the wiring where it passes the hot EGR pipe. Its a common issue where the wire insulation is damaged resulting in misfires but often no codes. This happened to mine and the engine was sluggish at 1000-2000rpm, once I repaired the damaged wires it was like a new engine in comparison.
 
Why I could hear slight "shhhh" near to fuel pressure regulator and intake, can you make another video?
