what's the situation like as far as finding accessible trails in the UK?
 
They are all public roads, all you have to do is find out if its still legal to use them. But its getting harder to do so.

what does that mean in practice? that you have to drive 300 miles to the other side of the country to find a little used dirt road with some muds or are there all over the place?

I imagine you don't have much public lands like we do in the West of the US where you can go pretty much anywhere you want?
 
We have very little public land and you can only drive on it is there is a public right of way across it.

Within 50 miles of me there is enought trails to keep you going for weeks. I have been doing it for about 20 years and still find new ones. Some have not been used for 30-40 years. As for checking if they are legal to use, that it can be as easy as sending an email to the local (to that area) council. Every council has a ROW office.

The dots mean its an ORPS (Other Route with Public Access) and 99 out of 100 times its legal to use. If you move the map around you will see lots of them in that area.

The other type is

A BOAT (Byway Open to All Trafic).

We have both types all over England and Wales, Scotland is not the same as it is all private land.

No, as long as its a public right of way then its ok to drive it.
