Just replaced my steering rack with a new OEM one, new inner outer tie rods, fluid, PS pump and alignment from Toyota.

Drove for about a week with the VSC active before it kicked in taking an off ramp from the freeway.... Was actually nice to drive without the two VSC lights on the dash but once again I have turned them off.

Any ideas? It's a 2000 so I don't think there's a sensor or anything that needs to be reset?
 
Maybe check your front wheel bearings for sloppiness and set the preload if needed?
 
My 2000 would do this randomly on the highway. I tracked it down to a dirty wheel speed sensor, and the ABS ring being dirty as well. I assume you have checked those as well?

My '06 will kick VSC on if I hit a corner too fast and the body rolls faster than a typical turn. These yaw sensors can be a little finicky.

Yeah I actually cleaned the wheel speed sensors not too long ago as preventative (from my bmw days when they would get gunked up with metal shavings)
