I know it's been a while since this post...
I traded in my 2011 6 speed for a 2016 8 speed. The shifting from 1 to 2 is driving me bananas. it's like a hesitation kinda skipping feeling. I had 2 dealers look at it and the latest software update. Nothing has changed. both dealers say everything is fine.
All the other gears feel just fine.

Are you still finding going with the larger tire resolved the 1 to 2 shifting debacle?
My stock tires are 285/60/R18. It looks like the 285/65R18 KO2's are about an inch larger in diameter compared to the stock tires?

I'm not sure about the 8 speed but I used to feel like the 6 speed would downshift into 1st kinda harshly. I noticed that subsided right after I moved up to 33s.
 
The 285/65R18s are "about" an inch larger in diameter. And they are considerably heavier assuming you go with the E-rated tires. As for feeling the difference between these and stock it is hard for me to say. I put the KO2s (285/65R18) on in the first week of ownership. (2016MY). I just replaced them today after 62K miles. And I love how the LC feels with new KO2s on. My old ones had a bit of wear left in them so I don't know how much difference it should make but with the new ones it feels great. My only comparison is my snow tires which are 285/60R18 and those don't feel quite as good. But as for transmission shifting I don't know that I noticed a difference.

Was referred to this thread from another while discussing shift shock. I’m very interested to know if going bigger on tires will solve my issue.

One complicating factor: my stock 17 clears the garage door by about 2” now. Any recommendations on tires that might solve my issue, can use the stock rims, but not increase the overall height of the vehicle by more than ~1”?

My 16 seems to like the 34's.

(34 new tires size - 31.6 factory size) / 2 = Increase in overall height approx 1.2". Likely a little less.

You can check the spec'ed diameter of your current tires and then whatever new ones you're interested in via the manufacturers. I think you'll be able to run 33s but it'll be even tighter obviously. Keep in mind you're only increasing your height by 1/2 of the difference in diameter - i.e. if you go from 31s to 33s that's only 1" additional height. Tire pressure, actual diameter, vehicle load, tire sidewall stiffness, etc will have a very small effect on the tire height as well.

Or add a lift and big tires and then raise the garage door height and to hell with the tight clearance!

Side question - why do they still even make 7' tall garage doors? I'm lucky to have 8' tall garage doors. but unfortunately it's an early 1900's garage so they're also only 7' wide,. The LC *barely* fits with the mirrors extended. I've got your issue but turned sideways ;-)

The 285 65s are a little over an inch taller than the 60s that come stock. So actual ride height will be about half an inch taller. They will fit fine with no rubbing. Getting ready to install a set of 285 65s Goodyear Duratracs on my new Heritage edition this Thursday. These tires are E load rated so a stiffer sidewall and heavier than stock. I tow a small RV trailer occasionally so I'm ok with a possible harsher ride.

Yes, and will be a very small difference. You can also run 275/70/18 which is 33.2" and just requires removing the front mud flap

After much research on what others had done I went with Nitto Ridge Grappler T285/70R18 E 127/124Q which measure at 33.98" x 11.5.

They barely touched the KDSS on the front driver, and both front mud flaps I needed to heat with a heat gun and then press them back with a piece of fire wood.
To fix the KDSS touching I used BORA 3/4" spacers.
I removed the front mud flaps, and installed the tires and they were ok driving around.
The when the bora spacers arrived I installed them and put the mud flaps back on.
Then heated the mud flaps with a heat gun till they were soft and put a piece of fire wood to pinch the mud flap into place until it cooled down.

They fit perfect.
