I'm going down to the local petting zoo for a quail "hunt" on Monday... I should have about 20 birds or so afterwards. I've never cooked quail, so hit me up with some awesome recipes....

Do you see any quail out in the wild anymore? I haven't seen quail around here for years. I think it's the coyotes.

I haven't *hunted* quail in probably 20 years. I grew up running dogs and hunting on horses... but by the time I was in my teens we were already paying for birds around here..

In Texas it was the red ants that has hurt the population. I remember watching a show on the fleecing of America where they said like 6 million dollars of Fed money was used for quail research. This was probably like ten years ago when 6 million actually meant something in Fed spending.


A basic quail recipe is just like for dove or duck breast.

Season, wrap in bacon (with water soaked toothpicks to hold the bacon on) stuff with jalapeño peppers, and barbecue. Some people like to throw a little pepper jack cheese or cream cheese in there too. Quail is some good s***.

i can grill the hell out of dove, so if they can be done the same... then im home free..

We're starting to see more wild quail around here now. It's still nowhere near the numbers the old timers talk about, but it is improving.

I've heard some speculation that an increasing coyote population is actually helping the quail, because the yotes are eating the quail predators. Some people are saying that quail are evolving and building nests off of the ground (away from fire ants). I dunno if there is any truth to either, though...

I know they cost $7 a bird in MS...
 
yeah, there are coyotes in Aiken now. All the cat and small dog lovers are up in arms. I wish there were coyotes down here to eat some of the huge cat population. Maybe the birds will come back.

Haven't hunted quail in about 20 years. We used to cut the breast out, bread em and fry em. Nice little tasty chunk of white meat.

Is that for a grown bird, already cleaned?

Yeah, all we do is shoot. You take the actual birds you kill, but they clean and pack them for you... It's my first time with this group of guys from work, but it's an annual event and gets me out of the office for a day. The s*** talking has been epic.

Oh, I got you - that 7 bucks is for the "hunt". I thought you meant that's how much they cost in the grocery store per.
 
Breast 'em, bacon wrap and fry in a skillet...
 
All my local grocery stores have quail, usually at least 2 different brands.

Definitely wild quail around here. My Dad was at a place that had more quail than he had ever seen :cool:

We have just grilled quail like a little chicken.
 
My great great aunt had a black cook in Union Springs, Alabama, that would fry the quail in a deep skillet like you would fried chicken. She and her two remaining sisters would have me over for formal lunches when I was a kid during the summers and we would have unsweet sun tea, fried quail, sliced tomatoes, lima bean and corn salad, and homemade tomato aspic at the dining room table with linen napkins and china and good silverware. It was really cool, classic Southern stuff.

Anyway, the thought of fried quail made me think of all of that. Anyway it was the best goddamned bird you could possibly imagine. I wish I had the recipe.
