Tasty Quail Recipes??? Post them up..

My great great aunt had a black cook in Union Springs, Alabama, that would fry the quail in a deep skillet like you would fried chicken. She and her two remaining sisters would have me over for formal lunches when I was a kid during the summers and we would have unsweet sun tea, fried quail, sliced tomatoes, lima bean and corn salad, and homemade tomato aspic at the dining room table with linen napkins and china and good silverware. It was really cool, classic Southern stuff.

Anyway, the thought of fried quail made me think of all of that. Anyway it was the best goddamned bird you could possibly imagine. I wish I had the recipe.

Not at all. All three were school teachers in the Bullock County public school system. My Aunt Olivia, who had the black cook, Emma, lived in one of those nondescript one-level brick houses on a slab on a county road. It wasn't even that nice. Today, most folks would not even want a house like that. She had a screened-in concrete porch with astroturf-like carpet in the back. I'm sure they were all three pensioners from their teaching careers. And there had been something like thirteen siblings, but by the time I was around, it was just four of them: my great grandmother, who was in a home in Birmingham, and her three sisters discussed above. It was idyllic and charming, but there was no money.

You do.
But I can attest to those big spread Alabama suppers and dinners.
When I was down there back in the late 70's my cousin's Granny Cally had a black woman that came and cooked and cleaned as well. And they were by no means wealthy.

Bobwhites or blues ?
Bobwhites i would fry like chicken, but maybe add a little Tonys cajon seasoning. Serve it up with some rice and gravy.
Blues i would breast out. Soak the breast fillets in tabasco for a couple of minutes, and then light batter and fry quickly for maybe 1 1/2 mins. Serve them up over cheese grits. Very tasty treats. Also works great with pheasant (cut into 1" cubes).
As with any game do not over cook !
I guess i need to thaw some out now that i'm craving the latter dish.

Just lined up a second hunt for the 29th. So I should wind up with 50~ total....
 
I cook quail and chukar like this. Spice them with whatever you like, wrap in bacon, add some butter, and wrap in tinfoil. Then throw it on the grill or campfire. We like to do this after the hunt, before we head home.

Sounds like good old southern living, not money. Cool story. I get goose bumps when I think of my childhood with huge live oak trees, old houses, old relatives, and the way it used to be.;)
 
Splitshot's wrapped in bacon dish sounds like a winner.

At least someone appreciates what to do with a tiny white breast..:D

You can bake afterwards with a cream style soup, but this has been the best way to cook 'em IMO..

butter and vinegar based BBQ sauce then on the grill.....
