Tasty Quail Recipes??? Post them up..

I used to hunt quail in Northern California where there were tons of blackberry brambles. I'd shoot birds, pick berries and take them home and breast out the birds (there's not much on the rest of the bird). I'd cook the birds in butter, make a glaze with blackberry jam (reduced in the pan with the butter and drippings from the quail) and then garnish with the fresh blackberries. Serve them on a bed of cous-cous with the glaze spooned over the top.

Alot of the other recipes seem to cover the flavor with spices or sauces and I don't think that's necessary at all. Small birds, but delicious.....
