That set up would be pretty close to flush and not breaking the plane. With the S/T you are losing approximately 30mm in offset from the stock 60mm. Take a string and tape it to the fender above the hub or axle and put a nut or something on the end for weight. Measure out from the tire 1.25 inches and that is where you will end up. If you have 275's now add another .5 inch or so.
This is a picture of +20 offset with a 275/70/18. Should be close to the same look.
Not the best angles but I would call the fitment flush. If you are looking to poke out further you will need to run an aftermarket wheel in the offset +25 or lower to get that look. On stock height under full compression with more aggressive than you suggested you will likely have issues.
