I am not a fan of the diamond plate but now that it is on I am guessing it would be a huge chore. It isn't covering up rust which is great but I would prefer it gone.

I have a bench seat for the back but wanted to provide some more room for my dogs, especially when I take the top off in a couple of weeks. I installed one of the original jump seats as shown in the picture but left out the other as it is need of recovering. Rarely am I going to be driving 4 deep in it anyways.

Find a local auto upholstery shop. Redoing the seats IS NOT DIFFICULT. If you redo the seats, that's a great time to check for rust and breaks, weld and repair, sand blast the frame and paint or powder coat.

Have fun with the dogs! My old girl thinks my rig is too high.

The choke element on the Weber is suppose to be fed 12v+ off the ignition circuit to heat it's bi-metal element and wind the choke blades off as it warms up the engine . If it's running fine without it hooked up I suspect it's been adjusted wide open - you can either leave it alone or dive into setting up the choke correctly and hooking it into the ignition system . FYI - for those running a Weber w/electric choke you can use the original wiring in the Cruiser that provided 12v+ to the idle solenoid on the stock carb - it should be in the harness with the brake lamp connectors .
