On my GX470, I ran 10ga cable from the battery to the cargo area for my Engel fridge - ran both positive and negative, + through a circuit breaker in the engine bay and a 10amp fuse just before the fridge plug. Works perfectly.

Not being very smart, I'd now like to add an outlet to the cargo area, obviously using the wire I've run. I'm thinking of using a dual USB outlet, so 2amp draw/fuse.

I want to do this safely and properly, and not re-do the existing wire run. Can I simply extend off the existing wire and should I put a 2amp fuse inline between the outlet and existing wire? How would you do this, what suggestions do you have?

I ran 1/0 gage wire to the rear. From there I added a master disconnect switch inside the small cargo box and split it to my 3000W inverter and to a fuse block all hot glued to the rear inside cargo panel. I removed the A/C outlets from the inverter and installed them on the panel. Also added a Toyota 12VDC outlet. Main wire is fused near the aux battery.
 
I would say the cleanest way to do it would be to add a small blue sea relay box at the rear of the vehicle, on the power lead from the battery you already installed. Then you can wire fridge and outlets off of the fuse box (up to what 10ga can handle for that length from the battery).

Use a table such as Wire Gauge Amps Ratings for 12 volt Automotive Systems to figure out what draw your wiring can handle. I'd circuit breaker this line (as you already have) towards the bottom of the range your wire run is rated for. As TXLR100 suggests, I'd put a fuse box in the rear so that each draw can be separately protected with an appropriately rated fuse.
 
@TXLX100 @CV Kurt I appreciate your replies, and I'll put a small fuse block back there. I only intend to run the fridge and the usb outlet, so - easy.
