Alvaro and the wagon boys put on quite a beach party. I only took a few pictureswhich Alvaro managed to avoid somehow.

Oysters, 250 medium size and a Skillet added a couple dozen large size. Raw, bbq'd, with Mint/Dill Herb Crust, or lime and chipotle. We kind of invited ourselves so I only had a couple, but yum.

Eduardo's Paella

Beef ribs and sausage were browned first, set aside. Garlic and onions, bell pepper, then tomato sauce or salsa, chicken broth (I think), some seafood, mussels and clams, the meat was reintroduced, a couple bags of rice and finally these jumbo shrimp. There was calamari, but I didn't see how it was cooked. Browned before like the beef and sausage perhaps? Wow. It looked great. My son wasn't into it and we had to go. Sigh. At least I got a taste of the sausage and the sauce.

Try as we might, Jim and I could not find the campground where the others were holding up. We drove all the way up to Dillon Beach and back down to Marshall with no luck.

After dark, Jim found a wacky little road / turnout that went down to the perfect camping / tequila drinking spot.

No camping fee and a beautiful view in the morning...that is what I am talking about.

Eduardo is not so much Cajun .

I had to leave early and I missed the all the good stuff :mad: totally bummed out Eduardo's Paella is first rate , the man can throw down! :beer:

And for those that wanted the Mint/Dill Herb Crust topping (I think it'd be great atop scallops too!):

Add equal parts to a food processor (or mince by hand...): Fresh dill & mint, fine dry bread crumbs, chives or mild onion. Add 1.5 times grated parmesan cheese. 4-5 crushed piquin peppers or similar to taste. Black pepper to taste. Lemon zest. Combine and add enough extra virgin olive oil to wet.

Top oysters on the 1/2 shell...roast/bake/bbq until golden.

Base recipe: Emeril. As written: With Dan's tweaks...
 
Damn that looks AMAZING!! My mouth is watering looking at the Paella! Seriously!

It's on the books for next year..

I went Canoing at Del Valle Lake that day..
 
Wow, what a great time. The food was excellent (thanks Eduardo) and the company superb. I can’t wait for next year. Sorry but I neglected to bring a camera, but thanks to everyone else who shared. Speaking of sharing, I heard great things about Dan’s Oyster Herb topping. Thanks for sharing.

Dang: You didn't get to try it?! I was busy tak'n bbq'd oysters to our gals and I forgot about my bros :D.

I can't wait a year to do this again! Let's plan a campout somewhere on the coast and although we may not have Eduardo's paella (or maybe we will ;)) we can certainly have a wonderful shell fish cookout in camp! Let's do it!!!
 
The last time Kate ate an oyster was on our second date. She hasn’t touched one since. She ate several oysters with that herb topping and all I hear is how good it was. I’m definitely ready to expand my palate.

As for more beach camping, I’m in! In won’t be that same without Eduardo’s Paella but we’ll make do. I’ve always been a big fan of camping near the ocean. In fact, Kate and I may be at USAL Beach in September. Lets talk.

Oh...the thought of black sand between da toes! Let's go...are there any oyster & clam farms that far north or do we need to swing by HI?
