One of the funniest jokes I've ever heard:

Have you seen PKP 80's 80 or Hanna Q's 80? They are exactly how I would do mine: Cut the rear upper half of the body off after the rear passenger doors and leave it open in back with maybe a sealed soft top. Cage it of couse:

Unless you are going to bob the rear... you still have the long overhang. Much less work to simply cut the rear top portion off behind the 2nd set of doors like PKP80 did. You can make a bumper with even less overhang than that one too.

I like all the room I have in my FZJ80 and being able to be away from the elements with a flick of a window switch. Hope it doesn't get too cold in winter out where you are. Your resale value will be in the toilet as well.

Correct. Bobbing the rear will be part of the plan. The only thing I would miss would be the additional room, other than that it will be completely sealed. As for resale value, one look at my 80 says I don't need to worry about that much anymore!

i have my toyotas to wheel and have a good time with and i do have a cage in the 80 and i do think it looks good and i also think just lifting them putting some lights and bumpers and a winch is pointless if your not using it to the fullest whatever dudes peace out

I would be really careful with the generalizations... Some 80 owners may take offence to the way that you are talking. As for wheeling your 80, come out to Oregon... I got a trail for ya.
